Here's a list of the winners/ recipes for the 2011 Annual "Pie in the Sky" Bake Off!

Adult 1st Place- Connie Schear

Apple Crumb Pie

Topping:

1 cup flour

1/3 cup sugar

1/3 cup packed brown sugar

  1. Mix Together
  2. Cut in 1/2 cup butter
  3. Set Aside

 

Filling:

4 or 5 apples depending on size of pie shell, peeled and sliced

Mix Together

1 cup sugar

1 Tbsp flour

1 Tsp cinnamon

 Add to Apples

 

  1. Put apples into an unbaked pie shell.  Top with crumble. (I put foil around edge)
  2. Bake at 400o till crumbs are brown, usually about 40 minutes. 
  3. Take off foil for last 5 minutes.

Chocolate Wrapped Banana Cheesecake

 

Peanut Graham Crust:

1/2 cup (1 stick) butter, at room temperature

1/4 cup packed light brown sugar

2 cups graham cracker crumbs

1 large ripe banana, mashed

1 cup unsalted roasted peanuts, finely chopped

 

Banana Cheesecake Filling:

3 large, ripe bananas

1 Tbsp fresh lemon juice

4 packages (8 ounces each) cream cheese, softened

1/4 cup granulated sugar

1 pound mascarpone cheese

2 large eggs, at room temperature

1 Tbsp vanilla extract

 

Assembly:

10 bars (1.5 ounces each) Godiva dark chocolate, coarsely chopped

3 medium bananas

1/4 cup (1 stick) butter

1/4 cup packed light brown sugar

 

Make the Graham Cracker Crust:

  1.  Preheat over to 375o
  2. Beat butter and sugar in mixing bowl until light and fluffy, using electric mixer at medium-high speed.  Add graham cracker crumbs and mix well.  Add mashed bananas and peanuts and mix well.  Press mixture into bottom of 9 inch springform pan.
  3. Bake for 20 minutes or until crust is golden brown and set.  Cool in pan on wire rack.

 

Make the Banana Cheesecake filling:

  1. Reduce Oven temperature to 325 o
  2. Peel bananas and place food in processor bowl.  Cover and process until bananas are pureed.  Remove banana puree and place in bowl.  Stir in lemon juice and set aside.
  3. Beat cream cheese in mixing bowl until smooth, using electric mixer at medium-speed.  Ass sugar and beat until light and fluffy.  Add mascarpone cheese and beat 1 minute.  Ass eggs, one at a time, beating well after each addition.  Add vanilla and banana puree and blend well.  Pour over crust.
  4. Bake for 35 minutes or until filling still looks jiggly and underbaked.  Cool in pan on wire rack.  Cover with aluminum foil and refrigerate several hours or overnight.  Cheesecake will set and be firm to the touch.

 

Assemble the Cheesecake:

  1. Cut a piece of parchment paper or food-grade acetate to fit around the side of cheesecake.  Loosen cheesecake using a small knife.  Remove side of springform pan.
  2. Place chocolate in small microwae-safe bowl.  Microwave on medium (50% power) for 1 minute.  Microwave 30 seconds more or until chocolate is softened.  Stir until smooth and let cool.
  3. Spread cooled chocolate evenly on strip of parchment paper.  Allow chocolate to set up partially so that it is no longer wet to the touch, but is still malleable.  Press chocolate-covered strip directly onto side of cheesecake.  Refrigerate cheesecake until chocolate is set.  Pell off parchment paper. 
  4. Slice bananas on the diagonal.  Place butter and brown sugar into skillet.  Cook until mixture comes to a boil and is smooth, stirring constantly.  Add bananas and heat until bananas are carmelized.  Remove banana slices from mixtire, one at a time, and place on plate.  Arrange bananas on top of cheesecake in cocentric circles.  Serve immediately. 

 

Young Adult First Place- Alexa Ritter

S'more Pie

Ingredients:

1 (8 inch) graham cracker crust

1 (12 ounce) package Nestle' Toll House

Semi- sweet chocolate morsels- divided use

3 cups miniature marshmallows- divided use

1/3 cup milk

2 cups heavy whipping cream

 

Directions:

  1. Heat 1 3/4 cups moresels, 1 cup marshmallows, amd milk in a medium, heavy-duty saucepan over low heat, stirring until marshmallows are melted( do not overheat).  Pour into large bowl.  Cool to room temperature.
  2. Whip cream in small mixer bowl until stiff peaks form.  Fold 3 cups whipped cream and remaining marshmallows into chocolate mixture.  Spoon into crust; swirl top.  Garnish with remaining whipped cream and remaining marshmallows.

 

Young Adult Second Place- Jake Trapp

Jake's Pudding Pie

Ingredients:

4 pudding cups

1 pie shell

2 bananas

 

Directions:

  1. Mix the Pudding cups together and place mixture in pie shell .  Freeze for 1 hour.  Slice bananas and placeon top of pie.  Serve cold.

 

 

Young Adult 3rd Place: Brooke Lipot

Toll House Pie 

Ingredients:

1 unbaked deep dish pie shell

2 large eggs

1/2 up flour

1/2 cup brown sugar

1/2 cup granulated sugar

3/4 cup butter, softened

1 cup semi-sweet chocolate chips

 

Pie Shell Recipe (optional)

1/2 tsp salt

1 1/2 cup flour

1/2 cup shortening

4-5 Tbsp cold water

 

Directions:

  1. Preheat oven to 325o
  2. Beat eggs in a large mixer bowl on high speed of mixer until foamy.  Beat in flour and sugars.  Blend in butter.  Stir in chocolate chips and nuts. Spoon into pie shell.
  3. Bake for 50-55 minutes or until knife inserted in center comes out clean, cover with foil to prevent over browning.
